Ingredients:

Cake Batter:

  • 1 ¾ cups sugar
  • 1 ½ cups Wesson Oil
  • 4 unbeaten eggs
  • 2 cups flour
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 2 tsp cinnamon
  • 3 cups grated carrots
  • ½ cup chopped nuts

Cake Filling & Frosting:

  • 1 package powdered sugar
  • 1 8-ounce package cream cheese
  • ½ stick butter, softened
  • 2 tsp vanilla extract
  • 1 small can crushed pineapple
    Directions:

Batter:

  1. In a mixing bowl, beat sugar and oil until creamy
  2. Add eggs 1 at a time and beat well
  3. Sift dry ingredients and add to bowl while beating
  4. Add nuts and grated carrots
  5. Pour into 3 greased cake pans and bake at 325° for 25 minutes
  6. Remove and set on wire racks to cool

Filling & Frosting:

  1. Combine all ingredients into mixing bowl and blend with electric blender
  2. Place frosting between layers and on outside of cake
  3. Place cake in refrigerator to harden frosting

Serves 6-8
