Always a favorite any time of the year.

Ingredients:
Cake Batter:
- 1 ¾ cups sugar
- 1 ½ cups Wesson Oil
- 4 unbeaten eggs
- 2 cups flour
- 2 tsp baking powder
- 2 tsp baking soda
- 1 tsp salt
- 2 tsp cinnamon
- 3 cups grated carrots
- ½ cup chopped nuts
Cake Filling & Frosting:
- 1 package powdered sugar
- 1 8-ounce package cream cheese
- ½ stick butter, softened
- 2 tsp vanilla extract
- 1 small can crushed pineapple
Batter:
- In a mixing bowl, beat sugar and oil until creamy
- Add eggs 1 at a time and beat well
- Sift dry ingredients and add to bowl while beating
- Add nuts and grated carrots
- Pour into 3 greased cake pans and bake at 325° for 25 minutes
- Remove and set on wire racks to cool
Filling & Frosting:
- Combine all ingredients into mixing bowl and blend with electric blender
- Place frosting between layers and on outside of cake
- Place cake in refrigerator to harden frosting
Serves 6-8
