Another variation on the always popular brownie!

Ingredients:

  • 3 cups sugar
  • 1 1/8 cups softened butter or margarine
  • 4 eggs
  • 1 ½ tsp vanilla extract
  • ¼ to ½ cup cocoa
  • 2 ¼ cups self-rising flour
  • 1 ½ cups chopped pecans

Icing:

  • 1 cup confectioner’s sugar
  • 2-4 TBS cocoa
  • 2 TBS butter or margarine, softened
  • 2-4 TBS milk
  • ¼ cup chopped pecans

Directions:

  1. Cream butter and sugar with mixer
  2. Add eggs one at a time, beating well
  3. Add vanilla
  4. Sift together flour and cocoa
  5. Blend flour mixture & pecans into creamed mixture
  6. Spread thick batter evenly into a large (11×15) greased and floured pan
  7. Place into preheated 325° oven and bake for about 30 minutes,
  8. Apply icing (recipe below) as hot brownies are removed from oven

Icing:

  1. Sift together sugar and cocoa
  2. Cream butter into this mixture
  3. Begin adding milk until achieving a spreadable mixture
  4. Fold in nuts and set aside
  5. Spread icing over hot brownies; allow them to cool before cutting into squares

Makes about 36 squares
