Guaranteed rich and creamy; especially for chocolate lovers!

  • ¼ cup cold water
  • 1/3 cup sugar
  • 12 ounces dark sweet chocolate broken into pieces
  • ½ stick of unsalted butter cut into pieces
  • 3 cups whipping cream
  • 6 egg yolks
  • 1/3 cup sugar
  1. Combine water and sugar into small sauce pan over medium heat; just bring to a boil; remove from heat and add chocolate and butter
  2. Cover and let stand several minutes; remove lid and stir until mixture is smooth
  3. Scald cream in medium saucepan
  4. Beat egg yolks with remaining sugar in large bowl until thick and lemon colored
  5. Beat in chocolate mixture, add cream, beating constantly until blended
  6. Let cool, stirring occasionally
  7. Transfer to ice cream freezer and complete according to manufacturer’s directions

Makes 1 1/2 quarts
