I used to sneak into the refrigerator in the middle of the night to enjoy just a couple of tablespoons of this delicious dessert!

Ingredients:

  • 3 cups milk
  • 3 eggs (separated)
  • ¾ cup sugar
  • 1/8 tsp salt
  • 3 TBS cornstarch
  • 1 tsp vanilla extract
  • 48 vanilla wafers
  • 4 well-ripened bananas
  • 1/3 cup sugar

Custard:

  1. Scald milk in double boiler over direct heat
  2. In a small bowl beat egg yolks, add 2/3 cup sugar, salt, and cornstarch
  3. Very slowly pour about ½ cup of the scalded mile into the eggs, stir to blend
  4. Return egg mixture to the double boiler to combine with remaining milk, cook until thickened, about 6 minutes
  5. Remove from heat and add vanilla extract

Assembly:

  1. Layer vanilla wafers in 9” square pan
  2. Layer sliced bananas
  3. Beat egg whites stiff with ¼ cup of sugar
  4. Spread over pudding and bake 10 minutes in preheated oven at 375°
  5. Refrigerate after cooling, serve cold

Serves 10-12
