This recipe is from a Florida cook and is worth a try. Don't forget a scoop of ice on top is acceptable!

Ingredients:

  • ¼ cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 1 cup all-purpose flour
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 2 TBS hot water
  • 1 tsp vanilla extract
  • 3 cups peeled, diced cooking apples
  • ½ cup chopped pecans
  • ½ cup firmly packed brown sugar
  • ½ cup sugar
  • ¼ cup butter, softened
  • ½ cup whipping cream
  • 1 TBS rum
  • Whipped cream

Directions:

  1. Cream butter, gradually add sugar, beating well at medium speed
  2. Add egg and beat until blended
  3. Combine flour, salt, and cinnamon and mix well; add to creamed mixture; beat on low speed until smooth
  4. Sir in water and vanilla; fold in apples and pecans
  5. Spoon entire mixture into greased and floured 9” pieplate
  6. Bake at 350o for 45 minutes or until wooden toothpick inserted comes out clean; remove and set aside
  7. Into a small saucepan combine brown sugar, and next 3 ingredients, mix well; bring to boil and cook 1 minute;
  8. Stir in rum and remove from heat
  9. Have sauce available to spoon over individual servings (either hot or cold); top with dollop of whipped cream

Makes one 9” cake
