Delicious!  Is what we described this cheesecake recipe.  We think you'll agree.

Ingredients:

  • 1 ½ cups graham cracker crumbs
  • 2 TBS sugar
  • 1 tsp cinnamon
  • ¼ cup + 2 TBS butter
  • 3 8-ounce packages of cream cheese
  • 1 cup sugar
  • 4 eggs
  • 1/3 cup amaretto liqueur
  • 1 16-ounce carton sour cream
  • 2 TBS + 2 tsp sugar
  • 2 TBS amaretto (or 2 TBS almond extract)

Directions:

  1. In a food processor, mix cracker crumbs and next 3 ingredients thoroughly
  2. Press mixture into bottom and 1/2 “ up sides of a 9” spring-form pan
  3. Beat cream cheese until light and fluffy, gradually add sugar a little at a time
  4. Add eggs 1 at a time, beating well continuously
  5. Stir in amaretto and pour entire mixture into pie crust
  6. Bake at 375o for 1 hour
  7. In a mixing bowl, combine sour cream, sugar and amaretto and stir well
  8. Spoon sour cream mixture over cheesecake and bake at 500o for 5 minutes
  9. Allow to cool to room temperature, refrigerate 24-48 hours
  10. Garnish with slivered almonds and grate chocolate

Serves 10-12
