Great to substitute for shortcake with strawberries

Ingredients:

  • 1½ sticks butter, softened
  • 2 eggs
  • 1 pinch salt
  • 1 TBS pure almond extract
  • 1 ½ cups sugar
  • 1 ½ cups all purpose flour
  • ¼ cup of slice almonds
  • 2 tsp sugar

Directions:

  1. With electric blender or mixer combine butter, sugar, and eggs (one at a time)
  2. Add flour, salt, and extract until thoroughly mixed
  3. Line a 10” iron skillet with heavy duty aluminum foil with excess over sides
  4. Pour cake mixture into skillet
  5. Sprinkle almonds on batter and press lightly
  6. Sprinkle 2 tsp sugar over almonds
  7. Bake in preheated 350o oven for 35 minutes
  8. Remove from oven and allow to cool; remove from skillet, disposing foil and place onto serving dish

Serves 6
