Cornbread Muffins

These country-style muffins are a great addition at breakfast, lunch, or dinner!

Ingredients:

  • 3/4 cup sifted flour
  • 1 3/4 tsp baking powder
  • 1/2 tsp salt
  • 2 1/2 TBS sugar
  • 1/2 cup yellow cornmeal
  • 1 egg, lightly beaten
  • 1/2 cup plus 2 TBS milk
  • 1 1/2 TBS melted butter

Instructions:

  1. Preheat oven to 400°
  2. Grease 8 muffin tins
  3. To the flour add baking powder, salt, and sugar; sifting all into a mixing bowl
  4. Stir the cornmeal into the dry mixture and mix well
  5. Combine egg, milk, and melted butter into a bowl and add dry ingredients, stirring just enough to blend
  6. Fill muffin tins 2/3 full with batter, and bake 18-20 minutes

Yields 8 muffins
