Shrimp Quiche

Really popular for brunch anytime of the year.

Ingredients:

Crust:

  • 2 cup flour
  • ¼ tsp salt
  • 1 stick butter, cut in slices
  • 2 eggs
  • 1 TBS lemon juice
  • Parmesan cheese

Filling:

  • ½ stick butter
  • 3 green onions, thinly sliced
  • ½ pound small shrimp, cooked, peeled
  • ½ pint fresh mushrooms, sliced
  • 8 ounces whipping cream
  • 5 eggs, beaten
  • ½ cup Parmesan cheese
  • ½ tsp salt
  • ½ tsp black pepper
  • Sour cream

Instructions:

Crust:

  1. In a food processor, combine flour and salt, add butter while processing
  2. Add eggs and lemon juice; process until dough consistency
  3. Press dough firmly into bottom and side of a 9”-10” pie pan; sprinkle with Parmesan cheese
  4. Bake 12 minutes at 375°; remove from oven and allow to cool

Filling:

  1. Into a large skillet sauté green onions and mushrooms until mushrooms begin to brown; add shrimp; remove from heat and set aside
  2. In a separate bowl, whisk together eggs, whipping cream, cheese, salt and pepper; add shrimp mixture with melted butter; thoroughly combine
  3. Pour ingredients into baked pie shell and place into 350° oven for 30 minutes or until top begins to brown
  4. Place a dollop of sour cream on each serving
