In her notebook, Missy described this recipe as "Wonderful"! Before you get started, keep in mind this recipe feeds a crowd.
Ingredients:
- 3 10-ounce packages frozen chopped spinach
- 8 strips bacon
- 1 cup cubed ham
- 1 stick butter, divided
- 1 cup flour
- 1 ¼ cups milk
- 1 medium onion, finely chopped
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp Tabasco
- 18 eggs
- 1 ½ cups evaporated milk
- ½ cup French fried onion rings, crushed (optional)
- ½ cup grated Monterrey Jack cheese
Instructions:
- Cook spinach according to directions; drain well
- Quarter bacon and fry until crisp; remove from pan, set aside
- Fry ham in bacon dripping for 2 minutes; remove and place with bacon
- Add 4 TBS butter to drippings and melt; sauté onion until wilted
- Add flour and mix well with whisk
- Add spinach, salt, pepper, and Tabasco; mix well; remove from heat
- Melt ½ stick butter in another large skillet
- Beat eggs and evaporated milk together with pepper; scramble in butter until lightly set
- Butter 9” x 13” baking dish; spread half of egg mixture in bottom and layer half of bacon and ham over eggs; cover with half of spinach
- Repeat layers once more;
- Top with onion rings and cheese; refrigerate overnight; bake at 275° for 1 hour; allow casserole to come to room temperature before baking
