Bran Muffin Mix

Debbie provided this "healthy" muffin recipe.  Really works well for overnight guests who are accustomed to awakening very early in the morning.  They can simply place the refrigerated and filled muffin tin into the preheated oven and in 20 minutes, have a scrumptous breakfast bread!  I enjoy spreading real butter on these hot treats!

Ingredients:

  • 15 ounce box Raisin Bran
  • 1 small box dark raisins
  • 1 ½ cups sugar
  • 5 cups flour
  • 5 tsp baking soda
  • 2 tsp salt
  • 1 cup vegetable oil
  • 4 eggs, beaten
  • 1 quart buttermilk
    Instructions:
  1. Mix dry ingredients
  2. Mix wet ingredients
  3. Combine both mixes
  4. Fill desired muffin tins with filling and bake at 350° for 18 to 20 minutes

Unused, unbaked filling may be covered and stored in refrigerator for up to 1 week
