Missy's mom, Frances created this simple, yet delicious recipe for Mexican Quiche.  Wonder if a small amount of small-kernel corn and finely chopped red sweet pepper would work?

Ingredients:

  • 1 pound Monterrey Jack cheese, grated
  • 1 pound sharp cheddar cheese, grated
  • 6 ounces Half & Half
  • 1 whole Jalapeno pepper, seedless, finely chopped
  • 6 beaten eggs
    Instructions:
  1. In a mixing bowl, combine all ingredients well
  2. Pour into a buttered casserole
  3. Bake at 350° for 40 minutes
  4. Let stand 10 minutes
  5. Cut into serving size squares, serve hot
