Missy's mom, Frances created this simple, yet delicious recipe for Mexican Quiche. Wonder if a small amount of small-kernel corn and finely chopped red sweet pepper would work?

Ingredients:
- 1 pound Monterrey Jack cheese, grated

- 1 pound sharp cheddar cheese, grated
- 6 ounces Half & Half
- 1 whole Jalapeno pepper, seedless, finely chopped
- 6 beaten eggs
- In a mixing bowl, combine all ingredients well
- Pour into a buttered casserole
- Bake at 350° for 40 minutes
- Let stand 10 minutes
- Cut into serving size squares, serve hot
