Linda's Bran Muffins

A delicious bran muffin recipe from our good friend Linda.  This could be doubled or even tripled yielding an amount to feed a large group of hungry diners.

Ingredients:

  • 1 cup all-purpose flour
  • ½ cup sugar
  • 2 ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 ¼ cups 100% bran cereal
  • 1 cup milk
  • 1 egg
  • ¼ cup vegetable oil
  • 1 cup golden raisins, soaked in 1 cup water, and drained
    Directions:
  1. Combine first 5 ingredients and set aside
  2. Mix bran and milk and allow to soak 5 minutes
  3. To bran mixture add egg and oil; beat with a whisk
  4. Add bran mixture to dry ingredients, stir until mixed (don’t overbeat)
  5. Pour muffin mix into muffin pans, filling about ¾ full
  6. Bake at 350° for 15-20 minutes
