A "must have" accompaniment to fried seafood throughout the South

Ingredients:

  • 1 cup cornmeal
  • ½ cup all purpose flour
  • ½ cup corn flour
  • 1 TBS baking powder
  • ¼ tsp cayenne pepper
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp thyme
  • ¼ tsp white pepper
  • 1/8 tsp oregano
  • ¼ cup finely chopped green onion tops
  • 1½ tsp minced garlic
  • 2 eggs, beaten
  • 1 cup milk
  • 2 TBS unsalted butter or vegetable oil
  • Vegetable oil for frying
    Instructions:
  1. Combine all dry ingredients into large bowl, breaking up any lumps
  2. Stir in the green onions and garlic
  3. Add the eggs and blend well
  4. In small saucepan bring milk and unsalted butter to boil; remove from heat and add to flour mixture, half at a time, stirring well after each addition; refrigerate 1 hour
  5. Into a large skillet or deep fryer, heat 4” of oil to 350°; drop batter by tablespoonfuls, careful not to overcrowd; cook until dark golden on all sides; about 1 minute per side
  6. Drain on counter cooling racks over paper towels

Makes about 30
