French Toast Au Fromage

Want to impress your guests with a first class French breakfast?  Try this.  Worth the effort!

 

Ingredients:

  • 3 eggs
  • ½ cup milk
  • ½ cup orange juice
  • 1 7½-ounce package farmer cheese
  • 3 TBS honey
  • 1 TBS grated orange rind
  • ¼ tsp nutmeg
  • 8 1½” slices French bread
  • 3 TBS butter

Sauce Mimosa

  • Powdered sugar
  • Sauce Mimosa:
  • 1 cup orange juice
  • 1 TBS cornstarch
  • ½ cup dry champagne or white wine
  • 2 TBS honey
  • 1 orange, peeled and sectioned
  • ½ cup strawberries, halved
    Directions:
  1. Combine first 3 ingredients; beat well, set aside
  2. Combine cheese, honey, orange rind, and nutmeg
  3. Made a horizontal pocket in each bread slice; spoon about 2 TBS cheese filling into each pocket
  4. Place bread into a 13” x 9” x 2” baking dish;
  5. Pour egg mixture over bread; turn slices to coat evenly; cover and soak 15 minutes or refrigerate 8 hours
  6. Melt 1 ½ TBS butter in large skillet and; arrange 4 slices bread in skillet and sauté 4 minutes on each side or until browned; repeat with remaining butter and bread slices
  7. Serve with Sauce Mimosa
  8. Sprinkle with powdered sugar

Sauce Mimosa Directions:

  1. Combine orange juice and cornstarch into a saucepan; whisk until blended
  2. Stir in champagne, bring to a boil; reduce heat, and cook 1 minute
  3. Stir in last 3 ingredients

Serves 8
