Bran Muffins

Claudia's bran muffin recipe works well if you wish to add mashed bananas, dried sweetened cranberries, and/or walnuts or pecans

Ingredients:

  • 1 15-ounce box raisin bran
  • 1 ½ cups sugar
  • 5 cups flour
  • 5 tsp baking soda
  • 1 tsp salt
  • ¼ cup sliced almonds
  • 4 eggs, beaten
  • 1 cup Wesson oil
  • 1 quart buttermilk
  • ¼ cup golden raisin
  • 2 ounces bourbon
    Directions:
  1. Mix bran, sugar, flour, soda, salt, and almonds
  2. Add buttermilk, oil, soaked raisins and eggs and mix well
  3. Fill greased muffin tins about 2/3 full and bake 400° for 15-20 minutes
    Will keep in refrigerator tightly closed for up to 6 weeks
