Mary proves that "makin' them from scratch' is the only way to go!  And this recipe can't be beat!

Ingredients:

  • 2 eggs
  • 1 stick unsalted butter, softened
  • 1 1/8 cup sugar
  • 3 cups flour less 3 TBS reserved
  • 3 tsp baking powder
  • ½ tsp salt
  • Pinch baking soda
  • 1 cup milk
  • ½ tsp vanilla extract
  • 2 cups fresh blueberries
    Directions:
  1. Grease 2 12-muffin tins
  2. Into a large mixing bowl, cream together butter, eggs, and sugar
  3. Into a medium mixing bowl, mix flour (less 3 TBS), baking powder, salt and baking soda
  4. Add vanilla to milk and alternately add milk and flour mixture to creamed butter and egg mixture
  5. Place berries into a large mixing bowl; sprinkle with reserved 3TBS flour and turn until lightly coated; fold berries into batter
  6. Fill each muffin pan ¾ full and sprinkle with additional sugar; into any empty remaining cups pour half full with water
  7. Bake at 400° for 15-20 minutes

Makes 24 muffins
