One of our favorite holiday party appetizers.  A treat for true oyster-lovers!

  • 1 stick butter
  • 2 pints of oysters chopped with liquid
  • 2 small white onions, finely chopped
  • 1 jalape√Īo pepper, seeded, finely chopped
  • 3 heaping TBS flour
  • 2 TBS parsley
  • 2 green onions, finely chopped
  • ¬Ĺ cup Parmesan cheese




  1. Into a saucepan melt butter and sauté onions and pepper until wilted
  2. Add flour and stir until thickened and slightly brown
  3. Into another saucepan, simmer oysters and juice until edges begin to curl, drain liquid into the cream gravy above
  4. Add to oysters the parsley and green onions
  5. Place ingredients into casserole and pour cream gravy mix over oysters
  6. Sprinkle with Parmesan cheese
  7. Bake at 350o for 15 minutes
  8. Serve with your favorite crackers

Serves 12-16
