The spicy cheese blend is a very nice complement to the small shrimp.  A delicious appetizer; but watch for guests who monopolize the area around the Monterey Shrimp Dip!


  • ¼ stick unsalted butter
  • ½ pound very small shrimp, washed, drained
  • 2 green onions, thinly sliced
  • 4 ounces of Monterey Jack cheese with peppers, shredded
  • 1 cup Mexican blend cheese
  • 1 2 ¼ ounce can sliced ripe olives, drained
  • ¾ cup mayonnaise



  1. In a skillet, melt butter and sauté green onion about 2 minutes, add shrimp and cook until shrimp turns pink; remove from heat and set aside
  2. In a microwavable container combine cheeses, olives, and mayonnaise and cook on high for 2 minutes until cheese fully melts, stir occasionally
  3. Into the serving dish or chafing dish combine shrimp, onion, butter with the cheese mixture and stir well
  4. Serve hot with tortilla chips or your favorite cracker

Yields about 3 1/4 cups
