Lory's Oysters Bienville

Lory offers this rather simple yet very tasty variation to the traditional Oysters Bienville.

Ingredients:

  • Lory D
    • 1 stick butter
    • 1 large stalk celery, finely chopped
    • 1 medium onion, finely chopped
    • 3 doz. raw oysters, with oyster liquor strained and reserved
    • 2 cups shredded cheddar cheese
    • ½ cup milk
    Directions:
  1. In skillet sauté celery and onion in butter until wilted
  2. Add oysters to above and cook briefly until edges curl
  3. In separate bowl combine cheese into milk along with 3 TBS oyster liquor (if available)
  4. Fold that mixture into skillet with vegetables
  5. Place ingredients into ramekins or oven-proof shells (2 oysters/serving) and bake at 350° for about 15-20 minutes or until tops begin to brown

Serves 16-18
