Baked Brie Cheese I

This is a good representation of New Orleans’ Palace Café’s delicious appetizer


  • 2 Golden Delicious or Granny Smith apples, peeled, cored and cut into bite-size pieces
  • 5 fresh roasted garlic pods
  • ½ cup brown raisins
  • ½ cup golden raisins
  • ½ cup chopped pecans
  • ½ stick butter
  • 1 TBS olive oil
  • ½ tsp garlic salt
  • 1/8 tsp allspice
  • 1 tsp brown sugar
  • ½ tsp Worcestershire sauce
  • 2 TBS sherry, brandy, or Grand Marnier
  • 6 rounds of brie cheese
  • Curly leaf lettuce for serving bed


  1. Combine apples, garlic, raisins and pecans into a bowl and mix well
  2. In a skillet, melt butter with olive oil and add garlic salt and next 4 ingredients; simmer for 2-3 minutes; combine with apple-raisin mixture
  3. Bake brie rounds in a 350° oven for 10-12 minutes
  4. Assemble the cheese on bed of lettuce and place other ingredients around and over the cheese; serve hot
