Tomatoes, basil, roasted pepper and mozzarella team up to make for a delicious summer (or anytime) salad!

•    2 ripe tomatoes; thickly sliced
•    8 oz. fresh mozzarella cheese-thickly sliced
•    1 jar of roasted red peppers thinly sliced
•    ½ cup fresh basil leaves; torn

•    ¼ cup balsamic vinegar
•    ½ cup extra virgin olive oil
•    ¼ tsp crushed garlic

1.    Alternately layer tomato and cheese slices
2.    Top with peppers and basil
3.    Combine dressing ingredients and lightly sprinkle over salad Serve chilled.  Excellent as a light summer lunch.
