The inclusion of bacon and cheese will 'liven' up your biscuits!

Ingredients:

  • 2 cups self-rising flour
  • 1 TBS sugar
  • 1/3 cup shortening
  • 1 cup buttermilk
  • ½ tsp baking soda
  • ¾ pound sliced bacon, cooked & crumble
  • 1 cup shredded Cheddar cheese

Directions:

  1. Combine flour & sugar; cut in shortening with pastry blender until mixture resembles coarse meal, set aside
  2. Combine buttermilk and soda, stirring until soda dissolves; add buttermilk mixture, bacon, and cheese, stirring until dry ingredients are moistened
  3. Turn dough out onto lightly floured surface, and knead lightly 4 or 5 times
  4. Roll dough to ½” thickness; cut with 2” biscuit cutter
  5. Place on lightly greased baking sheet and bake at 425° for 10-12 minutes

Yields about 18
